I'm not sure I'm going to be able to find time to package and test this game, but if the creators or someone else in the community is up to the task, I can help!
Looks like there's only Windows builds available, so they would need to be packaged with Wine: https://github.com/RazZziel/PortableLinuxGames/wiki/Creating-appimages-from-Windows-applications
However, according to https://github.com/NebuPookins/hurrican, the game builds fine on Linux, so the best results would be to build it in a old-ish distro and package that

Hm, Mupen uses Python plugins and M64PY is a Python frontend, that makes things more difficult as I have trouble packing up some Python modules in a portable way!

M64PY won't be feasible for now, because of the Python issue; however things like wxMupen64Plus should be feasible
I didn't redirect the write directory; you can probably do that with the --datadir or --configdir parameters

Hmm, looks like SMTube AppImage package creation is already automated in https://github.com/AppImage/pkg2appimage/blob/master/recipes/SMTube.yml, but pkg2appimage doesn't appear to support cross-builds
If you have a 32bit Operative System, maybe you could try running `pkg2appimage SMTube`?
